The text of the The Encyclopaedia of Dairy Chemistry book has been drawn from diverse sources, and in the references quoted the author pays tribute to those who have contributed to the rapid progress of dairy science, and at the same time hopes that the references may be of use to those who seek a more specialized knowledge of sore aspects of the work. The student is urged to read at least two of the original papers wetted, for in so doing an interest will be stimulated which can never be derived solely from a text-book treatment.
